These Vegan Chocolate Banana Oat Pancakes are the perfect start to any Sunday! Just a few wholesome ingredients come together in your blender to make this chocolatey stack.
I don’t think anyone on this earth makes pancakes better than my dad. On the weekends, he’d sling delicious stacks of silver dollar pancakes, so thin and crepe-like you could eat dozens of them. His secret ingredient? A splash of orange juice in the batter. And yet, no matter how many times I make pancakes with a splash of orange juice in the batter, I just can’t make ’em like dad does. Looks like I’ll just have to keep going home to get the best pancakes on earth.
But, while I’m away, I suppose this chocolatey stack will do. These ones are so thick and fluffy, they’re like little pillows. Delicious, chocolatey pillows. The best kind, in my opinion.
The batter comes together in your blender, so it’s as easy as dumping in all the ingredients and whizzing ’em up for a few seconds.
Bonus: these pancakes are vegan and totally wholesome, even though they taste like dessert.
My secret ingredient? It’s not orange juice. I really would very highly not recommend putting orange juice in these. It wouldn’t be good. Instead, might I recommend Planet Oat dark chocolate oatmilk? You guys, they sent me four cartons of their new oatmilks, and I seriously can’t get enough of ’em. All four varieties taste like cereal milk (yes, the milk at the bottom of a bowl of cereal, which everyone knows is the best milk) and I’ve been putting them in absolutely everything.
Including these pancakes.
You can find Planet Oat at Kroger, Shaw’s, and Amazon Fresh, to name a few. If you can’t hunt it down in your area, though, I recommend Blue Diamond’s Chocolate Almond Breeze as a substitute. In any case, that creamy non-dairy goodness is what gives these pancakes an extra oomph of chocolatey flavor.

Ingredients
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 1/2 tsp baking powder
- Pinch kosher salt
- 1 large banana
- 1 cup dark chocolate Planet Oat oatmilk
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- Banana slices, chocolate chips, and/or more maple syrup, (for serving)
Instructions
- Combine oats, flour, cocoa powder, baking powder, salt, banana, dark chocolate Planet Oat oatmilk, maple syrup, and vanilla extract in a blender. Blend on high speed for about 60 seconds, or until completely combined. Allow to rest for 5 minutes to thicken.
- Heat a large non-stick skillet or griddle over medium heat. Grease with coconut oil or cooking spray. Scoop blended batter by scant 1/4 cupfuls onto the hot pan. Cook for about 3 minutes, or until edges are set and bubbles are beginning to form. Flip, then cook for another 2 minutes.
- Serve warm with plenty of sliced banana, chocolate chips, and maple syrup.
