I’m just waiting for the day I find out I have to go gluten free. The thought doesn’t excite me, but I feel like it might be inevitable. My mom and aunt both have Celiac disease, so I’m just biding my time and eating as many bagels as possible before the clock (probably) runs out. Fortunately for me, though, gluten free looks very different than it did when my mom was diagnosed with Celiac disease over a decade ago. I vividly remember the bread she used to buy. It was like sawdust, presumably held together by the tears of the people who had to eat it. And halfway decent baked goods? Forget about ’em. If you wanted to indulge your sweet tooth, your options were ice cream and ice cream, because every gluten free baked good was sad and tasteless. Thankfully for my mom, those days are long over. She no longer has to get her fix by asking, “Can I just smell it?” about every baked good she sees. (She still does that often, but she doesn’t have to.) And she can finally enjoy baked goods that aren’t just halfway decent, but completely incredible.

Like this here gluten free apple spice bread. It’s so moist (SORRY) and delicious, you’d never guess it’s gluten free! I lean heavily on pre-mixed gluten free flour blends by brands like Pamela’s, Bob’s Red Mill, and King Arthur. You can substitute most of them 1:1 for regular all-purpose flour, so it’s easy to make just about any recipe sans gluten! Now, before we go any further, I’d like to share some thoughts on the whole gluten free trend. My mom and aunt think it’s absolutely hysterical that anyone would choose to be gluten free, since they were forced to go through the ringer before it was cool. While I’m no dietitian, it seems to me like there are some common misconceptions about gluten and health.

Is eating gluten free really better for you?

Ultimately, when people go gluten free “for their health,” they might notice some weight loss, clearer skin, less bloating, and the like. Which is great! But these improvements probably come from adding more whole foods to your diet, not from switching to gluten free bread. So, in a sense, eating gluten free might actually be better for you, but only if you do it in a certain way. Gluten free options aren’t inherently healthier just because they’re gluten free, but they might be healthier if they include more plant-based ingredients and whole grains. (And yes, you can still eat whole grains on a gluten free diet. Just not all of them.) I also don’t believe in demonizing any particular food group. If you have an actual intolerance like Celiac disease, of course you can’t eat gluten. But it’s not inherently evil. Do you want to know why? Because bagels and sourdough and pizza and apple spice bread are delicious and they bring us joy. So what we aren’t going to do is make ourselves and each other feel bad for eating them.

What I’m trying to say here is this: A gluten free diet works wonders for a lot of people. It can reduce inflammation, eliminate tummy troubles, aid in weight loss, and generally contribute to warm and fuzzy feelings of wellness. But it’s not a miracle diet, and it’s not the key to health. It’s just another way of eating. So yes, include more plant-based foods and whole, good-for-you grains. Yes, indulge in delicious things like this apple spice bread without worrying about whether or not they’re nutritionally dense. Come to love a life of balance, with or without gluten, and your body and mind will thank you. If you’re considering going gluten free, more power to you. You may notice some positive changes, and you might not. You might love it, and you might not. No matter who you are, though, you’ll love this apple spice bread. Ingredients

Scale
  • 1 cup unsweetened applesauce
  • 1/4 cup vegetable oil, melted coconut oil, or melted butter
  • 1/2 cup vanilla Greek yogurt*
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar, (packed)
  • 1 3/4 cup gluten free all-purpose flour*
  • 2 tsp cinnamon*
  • 1/2 tsp nutmeg*
  • 1/4 tsp ground ginger*
  • 1/4 tsp allspice*
  • Optional: Pinch ground cloves*
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 large apple, (peeled, cored, and diced)

For the brown sugar topping:

  • 2 Tbsp brown sugar, (packed)
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350° F. Line a 9×5 loaf pan with parchment paper and set aside.
  2. In a large bowl, whisk together applesauce, oil or butter, Greek yogurt, egg, vanilla extract, and brown sugar, until combined.
  3. To the wet ingredients, add flour, spices, salt, baking soda, and baking powder. Fold in gently until just combined; do not overmix. Fold in diced apples.
  4. Pour batter into lined loaf pan and smooth out the top. In a small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle the topping evenly over the top of the batter.
  5. Bake in preheated oven for 55–60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to cooling rack to cool completely before slicing and serving. Enjoy with a good schmear of butter and a cup of coffee!

Notes

  • If you don’t have all these spices, you can use 2 tsp cinnamon and 1 tsp pumpkin pie spice instead.
  • I used nonfat vanilla Greek yogurt for this recipe, which adds a touch of sweetness. If you don’t have vanilla, though, you can sub plain Greek yogurt plus an extra 2 Tbsp of brown sugar. A seasonal apple-cinnamon yogurt would probably be great here too!
  • If you don’t want to make this recipe gluten free, simply use regular all-purpose flour instead. You could also up the health factor by trying a blend of all-purpose and whole wheat flour, but I haven’t tested it this way and cannot guarantee the results.

And then you've got a whole can of tomato paste sitting there and you're just like... wtf do I do with this 🙃🤷🏼‍♀️🍅 Well, let me introduce you to these Indian Butter Chickpeas. They're crazy-fast, super delicious, and have the added feature of using an ENTIRE can of tomato paste. I can assure you there is nothing more satisfying than dumping that whole can into one pot 🥴 And then, 20 minutes later, you'll be greeted with a big ol' bowl of creamy, comforting, curried deliciousness. Really missing the farmers market right about now. Really missing the farmers market right about now. My weekly trips to the crowded, colorful marketplace are one of my favorite parts of summer.
